
Coffee Bean Foundation
The foundation we visited is located at Jl. Rapuan, Mas, Kecamatan Ubud, Kabupaten Gianyar, Bali 80571. During our visit, we observed the process of making kopi luwak, which involves coffee beans that have passed through a luwak. There are multiple cleaning and processing layers in place to prevent contamination and ensure the coffee is safe to consume.
The Coffee Bean Foundation offered a variety of coffee and tea samples, including lemongrass tea, ginger tea, Balinese coffee, and more. Some of the drinks were quite bitter and not to my taste; however, my favourite was the mango tea, which was sweet and very enjoyable.
The luwaks roam freely at night and eat ripe coffee cherries. During the day, farmers collect the droppings containing the coffee beans. The foundation does not have a website, and I was unable to find additional information about the team.
Luwaks choose ripe coffee cherries, and during digestion, enzymes ferment the beans and break down proteins that cause bitterness. This process results in a smoother flavour. Once excreted, the beans are thoroughly cleaned and processed. The coffee beans are not affected by the outer waste because they are protected by multiple layers. Luwaks also eat a varied diet, including fruits and insects.
